Making pasta from scratch is a moment of pause in a fast-moving world—a chance to knead, roll, and shape something with your own hands. Whether you're preparing a quiet dinner for one to two or sharing a meal with loved ones, this handmade pappardelle is more than just food—it’s an experience.

Ingredients

  • 150g durum wheat flour

  • 75ml water


Method

  1. FORM THE DOUGH: On a clean surface, mound the flour and create a well in the centre. Slowly pour in the water, mixing gently with a fork before bringing everything together with your hands.

  2. KNEAD: Work the dough for about 10 minutes until smooth and elastic—it should be firm but not sticky. Wrap in plastic wrap and let it rest for 30 minutes.

  3. ROLL & CUT: Divide the dough into portions, keeping unused dough wrapped. Roll out each portion to 3mm thickness using a pasta machine or rolling pin. Slice into wide pappardelle ribbons (13mm).

  4. COOK: Bring a large pot of salted water to a boil. Fresh pasta cooks quickly—just 2 minutes. Reserve some pasta water before draining to help emulsify your sauce.


Serving Suggestion

Pair this delicate pappardelle with vibrant, seasonal flavours—perhaps a fragrant mushroom ragù, a drizzle of garlic-infused olive oil, or a bright, citrusy Gremolata—an Italian condiment made of parsley, garlic, and lemon zest. Sprinkle it over pasta, veggies, and more for a burst of fresh, bright flavour.
